4 cups zucchini sliced like apples
4 cups of apples cored and sliced thin
1/2 cup sugar
1 1/3 cup brown sugar
1 cup cassava flour
1 cup gf oats
2/3 cup butter softened
Ice cream optional
- place apples and zucchini in a large sauce pan with 3/4 cup of water. Cover, stirring occasionally, until tender (about 10-15 minutes). Add in sugar, spices and stir until the sugar dissolves. Pour into a greased 13 by 9 pan.
- Combine the brown sugar, flour, oats and butter smash with a fork or use hands until crumbly. Sprinkle over the apple/zucchini mixture. Bake at 375 degrees F for 50 minutes or until the topping is golden brown.
